...there were cows in Brooklyn. And the cows grazed on Brooklyn's lush ample hills. Although the cows are gone and the grassy hills have made way for rows of brownstones, the pastoral small-town spirit of old Brooklyn lives on at our neighborhood ice cream shops and in the playful, nostalgic flavors we create.
We named Ample Hills after Walt Whitman's poem Crossing Brooklyn Ferry, which speaks of the connectedness of people across time and space...
We opened Ample Hills Creamery in the Spring of 2011, terrified no one would show up, and wholly unprepared for when they did. We were novice entrepreneurs and new parents, at the start of a wild and rocky ride. We dedicated ourselves to making ice cream the old-fashioned way, slowly, by hand. Some of our signature flavors include Salted Crack'd Caramel, Ooey Gooey Butter Cake, The Munchies and Snap Mallow Pop! These playful, whimsical flavors reflect the creativity of our Amployees, the vibrancy and spirit of our community, and our daily pledge to not take life too seriously – or at least ice cream.

An important part of who we are is reflected in the people who work at Ample Hills, otherwise known as Amployees. Many of our Amployees who began as scoopers have grown with us into chefs, managers and artists. Our Amployees have been called out by countless customers and reviewers as being some of the most enthusiastic and friendly staff they’ve encountered. We believe in being good to our people and encouraging them to pass that on to all that come in contact with Ample Hills. And if that means going out of our way to customize a person’s experience so that they walk away with joy, satisfaction and happiness then we are excited to make that happen. A favorite quote once said by a customer about an Amployee was, ”After asking me a few questions, the guy behind the counter reached into my ice cream soul and handed me the perfect combination of flavors.”
We start by using the best ingredients; hormone free milk and cream from grass fed cows and organic cane sugar. We pasteurize our ice cream base so that we can create individually specific flavors like pretzel-infused ice cream (the base used for The Munchies) or marshmallow-infused ice cream (the base used for Snap, Mallow, Pop!). And because we pasteurize on site, we are a registered dairy plant. Though we are serious about our craft, we do not make serious ice cream. Our flavors are playful and creative and always fun.
Almost all of our mix-ins are made in house from scratch. We are as much of a bakery as we are a dairy plant. We spend an equal amount of time baking and boiling as we do pasteurizing and churning. From our housemade peppermint patties, to our honeycomb candy, to our pistachio brittle, munchie mix and brownies; we create it all in our kitchen and generously add them to our ice cream.
